Instructions

  1. Cook Bacon: In a large pot, cook bacon until crispy. Remove and set aside. Leave 1 tbsp of grease in the pot.

  2. Sauté Vegetables: Add butter, then onion and garlic. Cook until soft and fragrant (about 3–4 minutes).

  3. Make Roux: Sprinkle in flour, stirring constantly for 2 minutes to form a roux.

  4. Add Broth and Potatoes: Slowly whisk in chicken broth, then milk and cream. Stir in potatoes, salt, and pepper.

  5. Simmer: Bring to a simmer. Cook for 15–20 minutes until potatoes are tender.

  6. Blend (Optional): For creaminess, blend part of the soup using an immersion blender.

  7. Finish with Cheese and Sour Cream: Stir in cheddar and sour cream until melted and smooth.

  8. Serve: Ladle into bowls and top with bacon, green onions, and extra cheese if desired.
