  • 3 cups cooked chicken, shredded (rotisserie works great)

  • 1 (10.5 oz) can cream of chicken soup

  • 1 (10.5 oz) can cream of mushroom soup

  • 1 cup sour cream

  • 1 cup mayonnaise

  • 1 cup shredded cheddar cheese

  • 2 cups egg noodles, cooked and drained

  • 1 (14.5 oz) can diced tomatoes, drained (optional)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper, to taste

For the Topping:

  • 1 cup crushed cornflakes

  • 2 tbsp butter, melted


Instructions

  • reheat Oven:
    Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  • Make the Filling:
    In a large bowl, combine shredded chicken, both soups, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until creamy and well blended.

  • Add Noodles & Tomatoes:
    Gently fold in the cooked egg noodles and drained diced tomatoes, if using.

  • Assemble the Casserole:
    Pour the mixture into the prepared baking dish and spread evenly. Top with shredded cheddar cheese.

  • Prepare Topping:
    In a small bowl, mix crushed cornflakes with melted butter. Sprinkle evenly over the cheese layer.

  • Bake:
    Bake uncovered for 30–35 minutes or until bubbly and golden brown.

 

  • Cool & Serve:
    Let cool for 5–10 minutes before serving.

Notes

Use Rotisserie Chicken: Saves time and adds extra flavor.

Make It Lighter: Use Greek yogurt in place of sour cream and mayo, and opt for reduced-fat soups and cheese.

No Cornflakes? Use Ritz crackers or panko breadcrumbs instead.

Make Ahead: Assemble up to 24 hours in advance and refrigerate. Add topping just before baking.
