Description

These no-bake Pecan Pie Balls capture the rich, nutty flavor of traditional pecan pie in a bite-sized treat. Coated in smooth chocolate, they’re perfect for holiday gatherings, potlucks, or as a sweet snack anytime.


Ingredients

  • 2 cups pecans, finely chopped

  • ⅔ cup graham cracker crumbs

  • ¾ cup light brown sugar, packed

  • ¼ tsp salt

  • ⅓ cup unsalted butter, melted

  • ¼ cup pure maple syrup

  • ½ tsp rum extract

  • 1 tbsp light corn syrup

  • 4 semi-sweet chocolate baking bars (approximately 4 oz), chopped


Instructions

  • In a large bowl, combine the finely chopped pecans, graham cracker crumbs, brown sugar, and salt.

  • Add the melted butter, maple syrup, rum extract, and corn syrup to the dry ingredients. Mix until well combined and slightly crumbly.

  • Using a cookie scoop or your hands, shape the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

  • Freeze the balls for 1 hour to firm up.

  • While the balls are chilling, melt the chopped chocolate in a microwave-safe bowl at 30-second intervals, stirring in between, until smooth.

  • Dip each pecan ball into the melted chocolate, ensuring it’s fully coated. Return the dipped balls to the parchment paper and top with a few pecan pieces before the chocolate sets.

  • Allow the chocolate to set completely. You can place the balls in the refrigerator for faster setting.

 

  • Serve at room temperature

Notes

For a richer flavor, consider adding a splash of bourbon instead of rum extract.

To make the balls gluten-free, ensure the graham cracker crumbs are certified gluten-free.

These treats can be stored in an airtight container in the refrigerator for up to a week or frozen for up to 2 months.
