  • 1 9-inch pie crust (store-bought or homemade)

  • 1 ½ cups pecan halves or chopped pecans

  • 3 large eggs

  • 1 cup light or dark brown sugar (packed)

  • 1 cup light corn syrup (or substitute with maple syrup)

  • ½ cup unsalted butter, melted

  • 1 ½ tsp vanilla extract

  • ½ tsp salt


Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Place the pie crust into a 9-inch pie dish and crimp the edges. Set aside.

  • Prepare Filling: In a large bowl, whisk together eggs, brown sugar, corn syrup, melted butter, vanilla, and salt until smooth.

  • Add Pecans: Stir in the pecans, or arrange them in the pie crust before pouring the filling over.

  • Bake: Pour the filling into the prepared crust. Bake for 50–60 minutes until the center is set but slightly jiggly. Cover the crust edges with foil if they brown too quickly.

 

  • Cool: Let the pie cool completely before slicing. This ensures clean cuts and a firm filling.

Notes

Toasting the Pecans adds extra flavor. Toast in a dry skillet for 2–3 minutes before adding.

Blind baking the crust helps prevent sogginess.

For a nut-free version, substitute pecans with pumpkin or sunflower seeds.

Add 2 Tbsp bourbon or a handful of chocolate chips for variation.
