1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 tbsp vegetable oil or sesame oil

1 cup pineapple chunks (fresh or canned, drained)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp hoisin sauce

1 tbsp rice vinegar

1 tbsp honey or brown sugar

1 tsp cornstarch + 2 tbsp water (slurry)

Salt and pepper, to taste

Cooked rice or noodles, for serving

Green onions and sesame seeds, for garnish (optional)
Instructions
Step 1 – Cook the Chicken:
Heat oil in a large skillet or wok over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through, about 5–7 minutes. Remove from pan and set aside.
Step 2 – Sauté the Veggies:
In the same pan, add a little more oil if needed. Stir-fry the onion, bell peppers, garlic, and ginger for 3–4 minutes until slightly tender but still crisp.
Step 3 – Add Pineapple:
Stir in the pineapple chunks and cook for another 2 minutes to warm through and slightly caramelize.
Step 4 – Make the Sauce:
In a small bowl, whisk together soy sauce, hoisin, rice vinegar, honey, and cornstarch slurry. Pour over the stir-fry and toss everything together.
Step 5 – Combine and Serve:
Return the chicken to the pan and stir until everything is well coated and the sauce has thickened, about 2 minutes. Serve hot over rice or noodles and garnish with green onions and sesame seeds if desired.
Notes
For extra spice, add a pinch of red pepper flakes or a splash of sriracha.
Fresh pineapple offers the best flavor but canned works well in a pinch.
You can swap chicken for shrimp or tofu for different protein options.
Gluten-free version: Use tamari instead of soy sauce and ensure hoisin is GF.
