For the Cake:
- 4 large eggs
- 1 cup all-purpose flour

- 1/4 cup unsweetened cocoa powder

- 1/4 teaspoon salt

- 1/4 cup buttermilk
- 1 tablespoon red food coloring

- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 oz cream cheese (softened)
For the Decoration:
- Powdered sugar (for dusting)
- Fresh berries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy. Add the vanilla extract, food coloring, and buttermilk, and mix until combined.
- Gradually add the dry ingredients to the wet mixture and fold until just incorporated.
- Pour the batter into the prepared pan, spreading evenly. Bake for 10-12 minutes, or until a toothpick comes out clean.
- Remove the cake from the oven and let it cool slightly. Then, invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Roll the cake up with the towel and let it cool completely while preparing the filling.
- To make the filling: Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. In a separate bowl, beat the cream cheese until smooth and then fold it into the whipped cream.
- Unroll the cooled cake and spread the cream cheese filling evenly over the surface.
- Roll the cake back up without the towel and transfer to a serving platter.
- Dust with powdered sugar and decorate with fresh berries, if desired. Slice and serve!

- The roulade can be prepared a day ahead. Store in the fridge and slice just before serving.
