For the Cake:

  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder

  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk
  • 1 tablespoon red food coloring

For the Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (softened)

For the Decoration:

  • Powdered sugar (for dusting)
  • Fresh berries (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  • In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the eggs and granulated sugar until pale and fluffy. Add the vanilla extract, food coloring, and buttermilk, and mix until combined.
  • Gradually add the dry ingredients to the wet mixture and fold until just incorporated.
  • Pour the batter into the prepared pan, spreading evenly. Bake for 10-12 minutes, or until a toothpick comes out clean.
  • Remove the cake from the oven and let it cool slightly. Then, invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
  • Roll the cake up with the towel and let it cool completely while preparing the filling.
  • To make the filling: Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. In a separate bowl, beat the cream cheese until smooth and then fold it into the whipped cream.
  • Unroll the cooled cake and spread the cream cheese filling evenly over the surface.
  • Roll the cake back up without the towel and transfer to a serving platter.
  • Dust with powdered sugar and decorate with fresh berries, if desired. Slice and serve!

  • The roulade can be prepared a day ahead. Store in the fridge and slice just before serving.
