Ingredients

Scale

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

For the pumpkin filling:

  • 1 can (15 oz) pumpkin puree
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

For the crumble topping:

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions

  • Prepare the crust: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, whisk together the flour, sugar, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your hands to incorporate the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Press the crust mixture evenly into the bottom of the prepared pan. Bake for 12-15 minutes, or until slightly golden. Remove from the oven and set aside to cool slightly.
  • Make the pumpkin filling: In a large bowl, whisk together the pumpkin puree, eggs, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, salt, vanilla extract, and heavy cream until smooth and well combined.
  • Pour the pumpkin filling over the cooled crust, spreading it evenly.
  • Prepare the crumble topping: In a medium bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Stir in the melted butter until the mixture forms a crumbly texture.
  • Sprinkle the crumble topping evenly over the pumpkin filling.
  • Bake the bars: Return the pan to the oven and bake for 35-40 minutes, or until the filling is set and the crumble topping is golden brown. A toothpick inserted into the center should come out clean.
  • Cool and serve: Allow the bars to cool completely in the pan before cutting into squares. For best results, refrigerate for a few hours before slicing to allow the filling to firm up.
  • Optional: Serve with whipped cream or a drizzle of caramel sauce for extra indulgence.

Notes

  • Make sure the pumpkin filling is smooth before pouring it over the crust to avoid lumps.
  • You can store these bars in the fridge for up to 3-4 days. They also freeze well for up to 2 months.
  • For a fun twist, sprinkle chopped pecans or walnuts on top of the crumble for added crunch and flavor.
  • If you don’t have heavy cream, you can substitute with evaporated milk, though the texture will be slightly different.
  • These bars are a great make-ahead dessert for Thanksgiving, fall parties, or just because!
