Instructions

  2. Bloom Gelatin: In a small bowl, sprinkle gelatin over cold water. Let sit for 5 minutes to bloom.

  3. Heat and Combine: Warm the raspberry puree in a saucepan over low heat. Stir in bloomed gelatin until fully dissolved. Cool to room temperature.

  4. Whip Cream: In a chilled bowl, whip heavy cream (and vanilla, if using) until soft peaks form.

  5. Fold Together: Gently fold cooled raspberry mixture into whipped cream until fully combined.

  6. Chill: Spoon into serving glasses and refrigerate for at least 2 hours, or until set.

  7. Garnish and Serve: Top with fresh raspberries, mint, or a dusting of powdered sugar before serving.

Notes

For smoother texture, double-strain the raspberry puree.

Adjust sugar depending on raspberry tartness.
