- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup powdered sugar (for dusting)
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 2 tbsp milk
- 1/2 cup mini Reese’s peanut butter cups, chopped
Instructions
- Preheat oven to 375°F and line a jelly roll pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat eggs and granulated sugar until light and fluffy.
- Stir in vanilla extract, then fold in the dry ingredients.
- Spread batter evenly in prepared pan and bake for 10-12 minutes, or until golden brown.
- Remove cake from oven and immediately turn out onto a clean kitchen towel dusted with powdered sugar.
- Roll cake up in the towel and let cool completely.
- In a mixing bowl, beat peanut butter, butter, powdered sugar, and milk until smooth.
- Unroll cake and spread peanut butter mixture evenly over the surface.
- Sprinkle chopped peanut butter cups over peanut butter mixture.
- Roll cake back up and refrigerate for 1-2 hours before serving.
Notes
- Make sure to roll the cake while it is still warm to prevent cracking.
- For best results, refrigerate the roll cake for a few hours to allow the filling to set and enhance the flavors.
- You can use smooth or crunchy peanut butter, depending on your preference.
- If you don’t have a jelly roll pan, you can use a regular baking sheet, but make sure to adjust the cake thickness accordingly.
