  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tbsp milk
  • 1/2 cup mini Reese’s peanut butter cups, chopped

Instructions

  • Preheat oven to 375°F and line a jelly roll pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, beat eggs and granulated sugar until light and fluffy.
  • Stir in vanilla extract, then fold in the dry ingredients.
  • Spread batter evenly in prepared pan and bake for 10-12 minutes, or until golden brown.
  • Remove cake from oven and immediately turn out onto a clean kitchen towel dusted with powdered sugar.
  • Roll cake up in the towel and let cool completely.
  • In a mixing bowl, beat peanut butter, butter, powdered sugar, and milk until smooth.
  • Unroll cake and spread peanut butter mixture evenly over the surface.
  • Sprinkle chopped peanut butter cups over peanut butter mixture.
  • Roll cake back up and refrigerate for 1-2 hours before serving.

Notes

  • Make sure to roll the cake while it is still warm to prevent cracking.
  • For best results, refrigerate the roll cake for a few hours to allow the filling to set and enhance the flavors.
  • You can use smooth or crunchy peanut butter, depending on your preference.
  • If you don’t have a jelly roll pan, you can use a regular baking sheet, but make sure to adjust the cake thickness accordingly.
