These Reuben Fritters are a crispy, cheesy, and indulgent twist on the classic Reuben sandwich. - 1 cup corned beef, finely chopped
- 1/2 cup Swiss cheese, shredded
- 1/2 cup sauerkraut, drained and squeezed dry
- 1/4 cup green onions, finely chopped
- 1 egg, beaten
- 1/2 cup all-purpose flour
- 1/4 cup breadcrumbs (preferably panko for extra crunch)
- 1 tablespoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
- Vegetable oil, for frying
- 1/4 cup Thousand Island dressing (for dipping)
Instructions
- In a large bowl, combine the chopped corned beef, Swiss cheese, sauerkraut, and green onions. Stir to mix well.
- In a separate bowl, whisk together the egg, flour, breadcrumbs, Dijon mustard, garlic powder, onion powder, salt, and pepper until smooth.
- Add the egg mixture to the corned beef mixture and stir until the ingredients are well combined. The mixture should be sticky but firm enough to form into small balls.
- Using your hands, form the mixture into small balls or fritters, about 1 1/2 inches in diameter.
- Heat about 1 inch of vegetable oil in a large frying pan over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully drop the fritters into the oil.
- Fry the fritters in batches, turning them as needed, until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with Thousand Island dressing for dipping.
Notes
- For a lighter version, try baking the fritters at 375°F (190°C) for 15-20 minutes, flipping halfway through, until golden and crispy.
- Feel free to adjust the filling by adding more cheese or sauerkraut, depending on your preference.
- These fritters can be made ahead and reheated in the oven to crisp them back up before serving.
