Description

Ingredients

  • 1 cup of diced chicken
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 2 cups of chicken broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add mixed vegetables and cook until slightly softened.
  4. Stir in rice and cook for 1-2 minutes.
  5. Pour in chicken broth and season with salt and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
