Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Add mixed vegetables and cook until slightly softened.
- Stir in rice and cook for 1-2 minutes.
- Pour in chicken broth and season with salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve hot.
