Ingredients

  • All-purpose flour
  • Unsweetened cocoa powder
  • Baking soda
  • Salt

  • Heavy cream
  • Sprinkles (for decoration)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly with the palm of your hand.
  • Bake for 8-10 minutes, or until set.
  • Allow the cookies to cool completely on a wire rack.
  • In a small saucepan, heat the heavy cream until just boiling.
  • Pour the hot cream over the chocolate chips and stir until smooth.
  • Drizzle the ganache over the cooled cookies and top with sprinkles for decoration.

Notes

  • You can refrigerate the cookie dough for 30 minutes before baking if you prefer a firmer dough.
  • The ganache can be made ahead of time and stored in the fridge for up to 3 days. Reheat it gently before drizzling on the cookies.
