Sausage Minestrone Soup is a rich and hearty Italian-inspired one-pot meal, loaded with vegetables, beans, pasta, and flavorful sausage in a savory tomato broth. It’s the ultimate cozy, comforting soup—easy to make, deeply satisfying, and perfect for leftovers or meal prep.


Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 2 tbsp olive oil

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 stalks celery, diced

  • 1 small zucchini, diced

  • 1 (14.5 oz) can diced tomatoes

  • 2 tbsp tomato paste

  • 1 (15 oz) can beans (kidney, cannellini, or garbanzo), drained and rinsed

  • 6 cups chicken or vegetable broth

  • 3/4 cup small pasta (ditalini or elbow)

  • 1 tsp Italian seasoning

  • 1 bay leaf

  • Salt and black pepper, to taste

  • 2 cups fresh spinach or kale (optional)

  • Grated Parmesan cheese (for serving)

  • Fresh parsley or basil (for garnish)


Instructions

  • Brown the Sausage
    In a large pot, heat 1 tbsp olive oil over medium heat. Add sausage and cook until browned, crumbling as it cooks. Remove and set aside.

  • Sauté the Vegetables
    In the same pot, add remaining oil. Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened.

  • Add Tomatoes and Broth
    Stir in tomato paste, diced tomatoes, broth, Italian seasoning, bay leaf, salt, and pepper. Bring to a simmer.

  • Return Sausage and Add Beans
    Add cooked sausage and drained beans. Simmer uncovered for 10–15 minutes to meld flavors.

  • Add Pasta and Zucchini
    Stir in pasta and zucchini. Cook for 8–10 minutes or until pasta is tender.

  • Finish with Greens
    Add spinach or kale and cook until wilted, about 2 minutes. Discard bay leaf and adjust seasoning as needed.

 

  • Serve
    Ladle into bowls and top with Parmesan and fresh herbs. Serve with crusty bread if desired.

Notes

For a creamier texture, stir in grated Parmesan or a splash of cream before serving.

For best results when freezing, cook and store pasta separately.

Feel free to swap in seasonal vegetables or your favorite sausage variety.
