Description

Shepherd’s Pie is the ultimate comfort food—rich, hearty, and deeply satisfying. A savory mix of ground lamb (or beef) and vegetables simmered in a flavorful gravy, topped with creamy mashed potatoes and baked to golden perfection. Ideal for chilly nights, family dinners, or meal prepping ahead, this classic British casserole is beloved for its homestyle warmth and simple ingredients.

Ingredients

Scale

For the Filling:

  • 1 tbsp olive oil or butter

  • 1 lb (450g) ground lamb (or beef for Cottage Pie)

  • 1 onion, diced

  • 2 carrots, diced

  • 2 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • ½ cup beef broth

  • 1 tsp fresh thyme (or ½ tsp dried)

  • ½ cup frozen peas

  • Salt and pepper to taste

For the Mashed Potato Topping:

  • 2 lbs (900g) potatoes, peeled and chopped

  • ½ cup milk or cream

  • 4 tbsp butter

  • 1 egg yolk (optional, for richness)

  • Salt and pepper to taste

Instructions

  • Boil Potatoes:
Boil potatoes in salted water until fork-tender. Drain and mash with butter, milk, seasoning, and egg yolk (if using). Set aside.

  • Brown Meat:
Heat oil in a skillet over medium heat. Add lamb and cook until browned. Drain excess fat if needed.

  • Sauté Veggies:
Add onions, carrots, and garlic to the pan. Cook until softened.

  • Add Flavor:
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for 1–2 minutes.

  • Simmer:
Pour in broth and simmer until thickened. Stir in peas and cook for another 2–3 minutes.

  • Assemble Pie:
Spread meat mixture in a baking dish. Top with mashed potatoes, spreading evenly and using a fork to create texture.

  • Bake:
Bake at 400°F (200°C) for 20–25 minutes until the top is golden and the filling is bubbling.

  • Rest & Serve:
Let sit for 5–10 minutes before serving.

Notes

Use Yukon Gold or russet potatoes for creamier mash.

Add a splash of red wine for deeper flavor in the filling.

Let filling cool slightly before adding mashed potatoes to prevent sinking.

Sprinkle cheese on top before baking for a cheesy crust.
