Description

Simple Greek Salad is a refreshing and light Mediterranean dish featuring juicy tomatoes, crisp cucumbers, tangy feta cheese, and Kalamata olives, all brought together with a zesty olive oil and red wine vinegar dressing. This easy-to-make salad is perfect for hot summer days, providing a nutritious, vibrant, and satisfying meal or side dish.

Ingredients

Scale

Vegetables & Olives

  • 2 ripe tomatoes, cut into bite-sized chunks
  • 1 large cucumber, sliced into half-moons
  • 1/2 small red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted

Cheese

  • 100g crumbled feta cheese (about 1/2 cup)

Dressing & Seasoning

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon fresh oregano, finely chopped (or 1/2 teaspoon dried oregano)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Prepare Your Vegetables: Wash and dry the tomatoes and cucumbers. Cut the tomatoes into bite-sized chunks and slice the cucumbers into half-moons. Peel and thinly slice the red onion to keep its flavor mellow and blend well with the other ingredients.
  2. Combine Olives and Feta: Place the Kalamata olives and crumbled feta cheese into your salad bowl. Use high-quality feta for the best flavor.
  3. Assemble the Salad: Gently toss together the tomatoes, cucumbers, onion, olives, and feta in a large bowl, evenly distributing the ingredients without breaking the delicate feta pieces.
  4. Dress the Salad: Drizzle with extra virgin olive oil and red wine vinegar. Sprinkle fresh oregano, salt, and black pepper on top. Toss lightly again to coat all ingredients evenly without bruising them.
  5. Let It Rest and Serve: Allow the salad to rest for about 10 minutes so the flavors meld. Serve chilled or at room temperature for an authentic Mediterranean experience.

Notes

  • Use fresh, high-quality ingredients to maximize flavor.
  • Avoid overdressing to preserve the crispness of the vegetables.
  • Chill vegetables beforehand to keep the salad refreshing.
  • Cut vegetables evenly for balanced texture and flavor in every bite.
  • Let the salad rest for 10 minutes before serving to allow flavors to meld.
