Ingredients
Scale
- 1 lb beef chuck roast or stew meat
- 4 cups beef broth
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 2 teaspoons brown sugar
- 1 teaspoon rice vinegar
- 1 teaspoon chili paste or sriracha (optional, for heat)
- 4 cups water
- 2 packs ramen noodles (discard seasoning packet)
- 2 green onions, sliced (for garnish)
- Soft-boiled eggs (optional, for garnish)
- Sautéed vegetables (e.g., spinach, mushrooms, or bok choy, optional)
Instructions
- In the slow cooker, combine the beef, beef broth, soy sauce, hoisin sauce, sesame oil, garlic, ginger, brown sugar, rice vinegar, and chili paste (if using).
- Cover and cook on low for 6-8 hours or until the beef is tender and shreds easily.
- About 30 minutes before serving, add the ramen noodles directly into the slow cooker, stirring to submerge them in the broth. Cover and cook for an additional 30 minutes, or until the noodles are tender.
- Once cooked, shred the beef using two forks, stirring it back into the broth.
- Serve the ramen in bowls, topping with sliced green onions, a soft-boiled egg, and sautéed vegetables, if desired.
Notes
- You can substitute the beef chuck roast with other cuts like brisket or flank steak.
- Adjust the level of spice by increasing or decreasing the chili paste or sriracha.
- For a richer flavor, add a splash of fish sauce or a drizzle of sesame oil before serving.
- This recipe can also be made with chicken or pork instead of beef for a different variation.
