6–8 bone-in, skin-on chicken thighs

1 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 cup chicken broth

2 tbsp soy sauce (or Worcestershire sauce)

2 tsp Dijon mustard

1 tbsp cornstarch + 1 tbsp water (optional, to thicken sauce)

Instructions

Prep chicken: Pat chicken thighs dry and season with salt, pepper, garlic powder, onion powder, and paprika.

Optional sear: Heat olive oil in a skillet over medium heat. Sear chicken thighs skin-side down for 2–3 minutes until golden.

Layer in slow cooker: Place chicken in slow cooker. In a small bowl, whisk together chicken broth, soy sauce, and Dijon mustard. Pour over chicken.

Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is fully cooked and tender.

Thicken sauce (optional): Remove chicken and whisk cornstarch slurry into the liquid. Cover and cook on High for 10–15 minutes until thickened.

Serve: Return chicken to slow cooker or plate and spoon sauce over top. Garnish with chopped parsley.
Notes
Bone-in thighs add more flavor, but boneless can be used for quicker prep.
Searing is optional but adds depth of flavor.
