- 1 (32 oz) carton of chicken broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 (9 oz) package of cheese tortellini
- 2 cups of fresh spinach
- Grated Parmesan cheese (for serving)
Instructions
- In a slow cooker, combine crushed tomatoes, chicken broth, onion, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the tortellini and spinach.
- Cover and cook for an additional 30 minutes or until the tortellini is cooked through.
- Serve hot with grated Parmesan cheese on top.

- For a vegetarian option, use vegetable broth instead of chicken broth.
- You can also add a splash of heavy cream or milk for extra creaminess.
