Ingredients

  • 1 (28 oz) can of crushed tomatoes
  • 1 (32 oz) carton of chicken broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 (9 oz) package of cheese tortellini
  • 2 cups of fresh spinach
  • Grated Parmesan cheese (for serving)

Instructions

  • In a slow cooker, combine crushed tomatoes, chicken broth, onion, garlic, basil, oregano, salt, and pepper.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir in the tortellini and spinach.
  • Cover and cook for an additional 30 minutes or until the tortellini is cooked through.
  • Serve hot with grated Parmesan cheese on top.

Notes

  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • You can also add a splash of heavy cream or milk for extra creaminess.
  • If you prefer, swap the spinach for kale or another leafy green.
