Ingredients

  • 1 pound smoked sausage, sliced into rounds

  • 2 pounds baby potatoes, quartered

  • 1 medium onion, chopped

  • 2 Tbsp olive oil

  • 1 Tbsp smoked paprika

  • 1 tsp garlic powder

  • Salt and pepper, to taste

  • Optional: fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 400°F (205°C). Prepare a baking dish.

  • In a large bowl, toss sliced sausage, quartered potatoes, and chopped onion.

  • Drizzle with olive oil and sprinkle smoked paprika, garlic powder, salt, and pepper. Mix well to coat evenly.

  • Spread the mixture evenly in the baking dish.

  • Bake for 40–45 minutes, stirring halfway through, until potatoes are golden and tender.

 

  • Serve hot, garnished with fresh parsley if desired.
