Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 3/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup dark brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  • In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  • In a large bowl, using an electric mixer, beat the butter and brown sugar until fluffy.
  • Beat in the egg, molasses, and vanilla extract until well combined.
  • Gradually stir in the dry ingredients until a dough forms.
  • Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 2 hours.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a floured surface, roll out the dough and cut out gingerbread men shapes using a cookie cutter.
  • Place the cookies on the prepared baking sheets and bake for 8-10 minutes or until the edges are firm and golden.
  • Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Be sure to refrigerate the dough for at least 2 hours to ensure the cookies hold their shape when baking.
