  • 4 oz cream cheese, softened

  • ½ cup shredded mozzarella or Parmesan cheese

  • 1 tbsp olive oil (plus more for sautéing)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 1 tsp Italian seasoning

  • Toothpicks or kitchen twine (for sealing)


Instructions

  1. Make the Filling: In a skillet, heat a drizzle of olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and let cool slightly. Mix with cream cheese and shredded cheese.

  2. Prepare the Chicken: Butterfly each chicken breast to form a pocket.

  3. Stuff the Chicken: Fill each chicken breast with the spinach mixture. Secure with toothpicks or tie with twine.

  4. Season: Rub chicken with olive oil and season with salt, pepper, paprika, and Italian seasoning.

  5. Sear: In an oven-safe skillet, sear chicken over medium heat until golden, about 2–3 minutes per side.

  6. Bake: Transfer skillet to a preheated oven at 375°F (190°C) and bake for 15–20 minutes or until internal temperature reaches 165°F (74°C).

  7. Serve: Let rest for 5 minutes, remove toothpicks, and serve hot.

Notes

For extra flavor, add chopped sun-dried tomatoes or crumbled bacon to the filling.

Use a meat thermometer to avoid overcooking.

Can be prepped up to a day in advance and refrigerated until ready to cook.
