  • 8 oz cream cheese, softened
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup strawberries, chopped
  • 1/4 cup strawberry jam

Instructions

  • Preheat the Oven: Preheat the oven to 325°F (165°C) and grease a 9×5 inch loaf pan.
  • Cream the Butter and Cream Cheese: In a large bowl, cream together the softened butter, cream cheese, and sugar until smooth and fluffy.
  • Add the Eggs: Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. Stir in the vanilla extract.
  • Mix in the Flour: Gradually add the flour to the mixture, mixing until just incorporated.
  • Fold in the Strawberries: Gently fold in the chopped strawberries.
  • Layer the Batter and Jam: Pour half of the batter into the prepared loaf pan. Spoon half of the strawberry jam over the batter and swirl it gently. Pour the remaining batter on top and spoon the rest of the jam over the top.
  • Bake the Cake: Bake for 70-80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Check for doneness after 70 minutes.
  • Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.

Notes

  • Make sure the cream cheese and butter are softened to room temperature for easy mixing.
  • For an extra touch, you can drizzle some more strawberry jam on top of the cooled cake or serve with whipped cream.
