  • Author: Sarah
  • Total Time: 2 hours 15 minutes (including chilling time)
  • Yield: 12-16 bites (depending on serving size) 1x

Description

These Strawberry Crunch Cheesecake Bites are the perfect balance of creamy, fruity, and crunchy. With a buttery graham cracker crust, a smooth cream cheese filling, sweet strawberry topping, and a crunchy Rice Krispies layer, they make a delightful treat for any occasion.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup whipped cream
  • 1 cup fresh strawberries, diced
  • 1/2 cup strawberry jam
  • 1 cup Rice Krispies cereal

Instructions

  • In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a baking dish (an 8×8-inch dish works well) to form the crust.
  • In a separate bowl, beat the softened cream cheese, powdered sugar, and whipped cream together until smooth and creamy. Spread the mixture over the graham cracker crust.
  • In a small saucepan, heat the strawberry jam over medium heat until melted. Stir in the diced strawberries and mix well. Spread the strawberry mixture evenly over the cream cheese layer.
  • Sprinkle Rice Krispies cereal on top of the strawberry layer for crunch.
  • Chill in the refrigerator for at least 2 hours or until set before cutting into squares or bites

Notes

  • If you prefer, you can use frozen strawberries instead of fresh, but make sure to drain any excess liquid before adding them to the jam.
  • For a more intense strawberry flavor, consider adding a bit of strawberry extract to the cream cheese layer.
  • You can store leftovers in an airtight container in the refrigerator for up to 3 days.
