Instructions

Make the Eclair Pastry:

 

  1. Preheat oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. Boil water and butter: In a medium saucepan, combine the water, unsalted butter, salt, and sugar. Bring to a boil over medium heat, stirring occasionally to melt the butter.

  3. Add flour: Once the butter mixture is boiling, add the flour all at once, stirring vigorously with a wooden spoon. Continue to cook for 1-2 minutes, until the dough pulls away from the sides of the pan and forms a smooth ball.

  4. Add eggs: Remove the pan from heat. Allow the dough to cool slightly. Then, add the eggs one at a time, mixing well after each addition. If the dough doesn’t appear smooth after all the eggs, add the extra egg one at a time until smooth and glossy.

  5. Pipe the dough: Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long eclairs onto the prepared baking sheet.

  6. Egg wash: In a small bowl, whisk together the egg and water for the egg wash. Brush the egg wash over each eclair before baking.

  7. Bake the eclairs: Bake for 25-30 minutes, or until the eclairs are golden brown and puffed. Do not open the oven door during the first 20 minutes of baking to avoid deflating the eclairs. Once baked, let them cool completely on a wire rack.

Notes

  • Custard Tip: If you want an extra touch of strawberry flavor, you can fold in some finely chopped fresh strawberries into the custard.
