Description

This creamy and refreshing Strawberry Mousse is a light and indulgent dessert, perfect for any occasion. Made with a blend of cream cheese (or coconut cream) and sweetened with a touch of vanilla, this mousse is both fluffy and rich. The addition of fresh strawberries gives it a delightful fruity twist.

Ingredients

Scale
  • 8 oz cream cheese or coconut cream

  • 4 oz yogurt or additional cream cheese or coconut cream

  • 1 cup powdered sugar or sugar-free alternative

  • 5 medium-sized strawberries (optional)

  • 1/4 tsp vanilla bean paste

Instructions

  • Prepare the Ingredients: If using cream cheese, make sure it is softened to room temperature for easy blending. If using coconut cream, make sure to refrigerate the can and scoop out the solidified cream.

  • Blend the Base: In a large mixing bowl, combine the cream cheese (or coconut cream), yogurt (or extra cream cheese), and powdered sugar (or sugar-free alternative). Use an electric mixer to blend until smooth and creamy.

  • Prepare the Strawberries: If using strawberries, wash and hull them. Blend or mash them until smooth or chunky, depending on your preference. If you want a smoother mousse, strain the mashed strawberries to remove any seeds.

  • Add Vanilla and Strawberries: Add the vanilla bean paste to the mixture and blend until fully combined. Fold in the mashed strawberries if using.

  • Chill the Mousse: Spoon the mousse into individual serving dishes or a large bowl. Refrigerate for at least 2 hours to allow it to firm up and set.

  • Serve: Garnish with fresh strawberries or a drizzle of strawberry puree (optional) before serving

Notes

  • You can make this mousse ahead of time and store it in the fridge for up to 3 days.

  • To make it dairy-free, use coconut cream and dairy-free yogurt or a vegan cream cheese alternative.

  • Feel free to experiment with other berries like raspberries or blueberries for a different flavor.
