  • 2 tablespoons low sodium soy sauce

  • 2 tablespoons honey

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 2 teaspoons sriracha (or 1 tablespoon for more spice)

  • 1 teaspoon minced garlic

  • ¼ teaspoon black pepper

  • The florets from 1 medium to large head of cauliflower (about 1 ¼ – 1 ½ lbs)


Instructions

  • Preheat the Oven – Preheat your oven to 400°F (200°C).

  • Prepare the Sauce – In a small bowl, whisk together the soy sauce, honey, olive oil, lemon juice, sriracha, minced garlic, and black pepper until well combined.

  • Prepare the Cauliflower – Cut the cauliflower into bite-sized florets.

  • Coat the Cauliflower – Place the cauliflower florets on a large baking sheet. Drizzle the prepared sauce over the cauliflower and toss to coat evenly.

  • Roast – Spread the cauliflower out in an even layer and bake for 25-30 minutes, flipping halfway through, until the cauliflower is golden and crispy on the edges.

 

  • Serve – Remove from the oven, and serve immediately as a side dish or snack.

Notes

Adjust the sriracha to suit your spice tolerance.

For extra crispy cauliflower, roast it for a few extra minutes or broil for the last 2 minutes.

This dish works great as a side for grilled meats or as a standalone snack.
