Description

The BEST Instant Pot Carnitas are juicy, crispy, and exploding with flavor—all in a fraction of the time of traditional recipes! With tender pulled pork infused with citrus, garlic, and warm spices, then broiled to golden perfection, these carnitas are perfect for tacos, burrito bowls, sliders, and more. A quick and easy pressure cooker meal with restaurant-quality results!


Ingredients

  • 34 lbs pork shoulder (pork butt), cut into large chunks

  • 1 onion, chopped

  • 45 cloves garlic, minced

  • ¾ cup orange juice (fresh-squeezed preferred)

  • ¼ cup lime juice

  • ½ cup chicken broth

  • 2 tbsp olive oil

  • 2 tsp cumin

  • 1 tsp oregano

  • 1 tbsp chili powder

  • 1 tsp paprika

  • 2 tsp salt (adjust to taste)

  • 1 tsp black pepper

  • 1 bay leaf


Instructions

  • Season the Pork – In a large bowl, toss pork with salt, pepper, cumin, oregano, chili powder, and paprika.

  • Sear the Pork – Set Instant Pot to Sauté mode. Add olive oil and sear pork in batches until browned. Remove and set aside.

  • Add Aromatics – Add onion and garlic to the pot. Sauté briefly, then deglaze with a splash of broth. Add orange juice, lime juice, remaining broth, bay leaf, and return pork to the pot.

  • Pressure Cook – Seal lid and pressure cook on High for 35 minutes. Naturally release pressure for 15 minutes, then manually release.

  • Shred the Pork – Transfer pork to a bowl and shred with two forks. Optional: drizzle with a bit of cooking liquid for extra flavor.

  • Broil for Crispiness – Spread shredded pork on a baking sheet. Broil 5–7 minutes until crispy. Flip and broil 2–3 more minutes.

 

  • Serve – Serve hot with tortillas, rice, or your favorite toppings.

Notes

Skip searing if you’re short on time—it’ll still be delicious.

Reserve cooking liquid for reheating or drizzling.

Pork loin can be used for a leaner version but won’t be as rich.

Carnitas freeze exceptionally well—great for meal prep.
