Description

Tiramisu Cookies combine the rich, creamy flavors of traditional tiramisu with the indulgence of cookies. These soft and chewy cookies are made with mascarpone cream and a touch of espresso, then topped with a dusting of cocoa powder. A perfect treat for coffee lovers and dessert enthusiasts alike!

Cookies

  • 110 g butter (softened)

  • 100 g granulated sugar

  • 100 g dark brown sugar

  • 1 egg (57-60 g with shell)

  • 1 teaspoon vanilla extract

  • 230 g all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 tablespoon instant espresso powder

  • ½ teaspoon salt

Mascarpone Cream

  • 180 g mascarpone cheese

  • 1 teaspoon vanilla extract

  • 90 g confectioners’ sugar

  • 20 g agave or honey

  • 120 g heavy cream

  • 1 tablespoon cocoa powder (for dusting)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the butter, granulated sugar, and dark brown sugar until light and fluffy.

  3. Beat in the egg and vanilla extract until fully incorporated.

  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, instant espresso powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.

  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Mascarpone Cream

 

  1. In a medium mixing bowl, whisk together the mascarpone cheese, vanilla extract, confectioners’ sugar, and agave or honey until smooth and creamy.

  2. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.

  3. Once the cookies have cooled, spread a dollop of mascarpone cream on top of each cookie.

  4. Dust with a small amount of cocoa powder before serving.

Notes

Store cookies and mascarpone cream separately in the refrigerator.

You can drizzle a bit of coffee or espresso on the cookies before spreading the mascarpone cream for extra flavor.

For a slightly different flavor, try using maple syrup instead of agave or honey.
