  • 3 cups Rice Chex cereal

  • 3 cups Corn Chex cereal

  • 1 cup pretzels (mini twists or sticks)

  • 1 cup pecans or walnuts (optional)

  • 1 cup (2 sticks) unsalted butter

  • 1 cup packed brown sugar

  • ¼ cup light corn syrup

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • ½ tsp salt


Instructions

  • Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone mat.

  • In a large bowl, combine Rice Chex, Corn Chex, pretzels, and nuts (if using). Set aside.

  • In a medium saucepan over medium heat, melt butter, brown sugar, and corn syrup. Stir constantly until mixture comes to a boil. Let boil for 3-4 minutes without stirring.

  • Remove from heat and stir in vanilla extract and baking soda (mixture will bubble).

  • Immediately pour hot toffee sauce over the cereal mixture. Stir gently to coat evenly.

  • Spread coated mix evenly on prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.

 

  • Remove from oven and cool completely before breaking into clusters. Store in an airtight container.

Notes

Stir gently to avoid crushing cereal during coating and baking.Light corn syrup helps achieve the right toffee texture—honey or maple syrup will change the consistency.

Baking soda creates a light, crunchy texture by reacting with the hot mixture.

Store in a cool, dry place for maximum crispness.
