  • 4 pounds russet potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked bacon, crumbled (reserve some for garnish)
  • ½ cup green onions, chopped (reserve some for garnish)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a large pot, boil the cubed russet potatoes in salted water until they are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  • Mash the potatoes with a potato masher until smooth. Add the sour cream, whole milk, melted butter, 1 cup of cheddar cheese, crumbled bacon (reserve some for garnish), chopped green onions (reserve some for garnish), garlic powder, salt, and pepper. Stir until everything is well combined and the mixture is creamy.
  • Transfer the mashed potato mixture to the prepared baking dish, spreading it out evenly.
  • Sprinkle the remaining 1 cup of cheddar cheese on top of the casserole.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish the casserole with the reserved crumbled bacon and green onions before serving.

Notes

  • For a creamier texture, you can add more sour cream or milk to your preference.
  • If you prefer a crispy topping, broil the casserole for an additional 2-3 minutes after baking.
  • You can make this ahead of time by assembling the casserole, covering it with foil, and refrigerating until you’re ready to bake. Add a few extra minutes to the baking time if it’s cold from the fridge.
