  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

  • 1/2 cup powdered sugar
  • 12 tablespoons milk (or heavy cream for richer icing)
  • 1/4 teaspoon vanilla extract
  • Pink food coloring (optional, for a Valentine’s look)
  • Sprinkles or heart-shaped confetti (optional for garnish)

Instructions

  • Make the dough:
    In a food processor or large bowl, combine the flour, sugar, and salt. Add the cubed cold butter and pulse (or cut it in with a pastry cutter) until the mixture resembles coarse crumbs.
    Add the egg and mix until just combined, adding ice water one tablespoon at a time until the dough comes together. Be careful not to overwork the dough. Divide the dough in half, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Make the berry filling:
    In a small saucepan, combine the mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and the berries break down into a jam-like consistency, about 5-7 minutes. Remove from heat and let cool completely.
  • Roll out the dough:
    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one disk of dough into a rectangle about 1/8 inch thick. Use a knife or pastry cutter to cut the dough into equal-sized rectangles, about 3×4 inches. Repeat with the second disk of dough.
  • Assemble the Pop-Tarts:
    Place half of the dough rectangles on a parchment-lined baking sheet. Spoon a small amount of the berry filling onto the center of each rectangle, leaving space around the edges. Top with the remaining dough rectangles and press down around the edges to seal them. Use a fork to crimp the edges of each Pop-Tart and create a decorative pattern.
    Make a few small slits on top of each pastry to allow steam to escape during baking.
  • Bake the Pop-Tarts:
    Bake the Pop-Tarts in the preheated oven for 20-25 minutes, or until golden brown and puffed up. Let cool on a wire rack.
  • Make the icing:
    While the Pop-Tarts are cooling, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add a drop of pink food coloring to make them extra festive.
  • Decorate the Pop-Tarts:
