For the Buttercream Frosting:
- 1 cup unsalted butter, softened
- 3–4 cups powdered sugar
- 2 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Red food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
- If you’re using food coloring, add a few drops of red food coloring and mix until the batter reaches your desired color.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool completely on a wire rack.
- While the cupcakes cool, make the frosting by beating the butter with powdered sugar, vanilla extract, and heavy cream. Add food coloring if desired.
- Once the cupcakes are cool, frost them with the buttercream frosting and add sprinkles or decorations on top.
Notes
- If you prefer a different frosting flavor, you can use cream cheese frosting or chocolate buttercream.
- Store leftover cupcakes in an airtight container for up to 3 days at room temperature or 5 days in the fridge.
- You can also make the cupcakes in advance and freeze them for up to 3 months.
