Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup raspberry jam (or fresh raspberries, mashed)
- 1 cup white chocolate chips
- 1/4 cup freeze-dried raspberries (optional, for garnish or extra flavor)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the dough:
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture, and beat until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the raspberry jam and white chocolate chips. If you’re using fresh raspberries, gently fold them in at this stage.
- Shape the cookies:
- Roll the dough into small balls, then gently press them down on the baking sheet. For heart-shaped cookies, you can press the dough into a heart-shaped cookie cutter or shape it by hand.
- If you’re using freeze-dried raspberries, sprinkle a bit on top of each cookie for added flavor and a decorative touch.
- Bake the cookies:
- Bake for 10-12 minutes or until the edges of the cookies are golden brown. They should still be soft in the center, as they will firm up as they cool.
- Cool and serve:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Optional finishing touch:
- Drizzle a little melted white chocolate over the cooled cookies for extra indulgence, or top with additional freeze-dried raspberries.
Notes
- For an extra burst of raspberry flavor, consider adding a few tablespoons of raspberry puree to the dough.
- You can substitute the raspberry jam with fresh raspberry preserves or a raspberry puree if you prefer a more intense fruit flavor.
- These cookies are perfect for Valentine’s Day, but can also be enjoyed as a spring or summer treat!
