Ingredients

1 small head cauliflower, cut into florets

1 (15 oz) can chickpeas, drained and rinsed

2 tbsp olive oil

1 tsp chili powder

½ tsp smoked paprika

¼ tsp cayenne pepper (optional for heat)

1 tsp garlic powder

Zest of 1 lime

Juice of 1 lime

Salt and pepper, to taste

1 avocado, sliced

1 cup shredded lettuce or cabbage

½ cup diced tomatoes

¼ cup chopped red onion

4 large tortillas or wraps (gluten-free if needed)

Vegan yogurt or tahini sauce, for drizzle (optional)
Instructions

Preheat Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Season the Veggies: In a bowl, toss cauliflower and chickpeas with olive oil, chili powder, smoked paprika, garlic powder, lime zest, lime juice, salt, and pepper.

Roast: Spread the mixture on the prepared baking sheet. Roast for 25–30 minutes, stirring halfway, until cauliflower is golden and chickpeas are crisp.

Prepare Wrap Ingredients: While roasting, prepare avocado, lettuce, tomatoes, and onion.

Assemble Wraps: Warm the tortillas. Layer with lettuce, roasted cauliflower and chickpeas, avocado, tomatoes, and onion. Drizzle with vegan yogurt or tahini sauce if using.

Notes
To make it gluten-free, use certified gluten-free tortillas.
