Description

Bold, zesty, and packed with plant-powered goodness, this Chili Lime Chickpea Cauliflower Wrap is a vibrant, satisfying meal that’s perfect for lunch, meal prep, or a light dinner. Roasted cauliflower and chickpeas are tossed in a spicy chili lime seasoning and wrapped in a soft tortilla with creamy avocado and fresh veggies. Vegan, gluten-free adaptable, and full of flavor—it’s a wholesome wrap you’ll crave again and again!


Ingredients

  • 1 small head cauliflower, cut into florets

  • 1 (15 oz) can chickpeas, drained and rinsed

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • ¼ tsp cayenne pepper (optional for heat)

  • 1 tsp garlic powder

  • Zest of 1 lime

  • Juice of 1 lime

  • Salt and pepper, to taste

  • 1 avocado, sliced

  • 1 cup shredded lettuce or cabbage

  • ½ cup diced tomatoes

  • ¼ cup chopped red onion

  • 4 large tortillas or wraps (gluten-free if needed)

  • Vegan yogurt or tahini sauce, for drizzle (optional)


Instructions

  • Preheat Oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • Season the Veggies: In a bowl, toss cauliflower and chickpeas with olive oil, chili powder, smoked paprika, garlic powder, lime zest, lime juice, salt, and pepper.

  • Roast: Spread the mixture on the prepared baking sheet. Roast for 25–30 minutes, stirring halfway, until cauliflower is golden and chickpeas are crisp.

  • Prepare Wrap Ingredients: While roasting, prepare avocado, lettuce, tomatoes, and onion.

  • Assemble Wraps: Warm the tortillas. Layer with lettuce, roasted cauliflower and chickpeas, avocado, tomatoes, and onion. Drizzle with vegan yogurt or tahini sauce if using.

 

  • Serve: Fold and serve immediately, or wrap tightly for meal prep.

Notes

To make it gluten-free, use certified gluten-free tortillas.

Add rice or quinoa to make it more filling.

Store leftover filling in the fridge for up to 4 days.

Great for packed lunches—just wrap tightly in foil.
