  • 3/4 cup (90g) powdered sugar

  • Zest of 2 lemons (about 2 tablespoons)

  • 2 tablespoons fresh lemon juice

  • 2 cups (240g) all-purpose flour

  • 1/2 cup (60g) cornstarch

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • Optional: additional powdered sugar or lemon glaze (powdered sugar + lemon juice) for topping


Instructions

  • Cream the Butter and Sugar: In a bowl, cream together softened butter and powdered sugar until light and fluffy. Add lemon zest, lemon juice, and vanilla extract and mix until combined.

  • Mix Dry Ingredients: In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the butter mixture and mix until a soft dough forms.

  • Chill the Dough: Wrap the dough in plastic wrap and chill for about 30 minutes to firm it up.

  • Shape the Cookies: Scoop and roll the dough into small balls, then flatten slightly with your fingers or the bottom of a glass.

  • Bake: Place cookies on a parchment-lined baking sheet and bake at 325°F (165°C) for 12–15 minutes, until edges are just set and bottoms are lightly golden.
