Description

Zuppa Toscana is a comforting Italian-inspired soup combining creamy russet potatoes, spicy Italian sausage, and fresh kale in a rich, savory broth. Easy to prepare and hearty, this soup offers a perfect blend of flavors and textures for cozy dinners or casual gatherings, with versatility for various dietary preferences.

Ingredients

Scale

Meat and Vegetables

  • 1 pound Italian sausage
  • 4 medium Russet potatoes, peeled and diced
  • 4 cups chopped kale
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids and Fats

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil

Seasonings

  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes, optional and to taste

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it apart as it cooks until browned and cooked through. Remove sausage from pot and set aside.
  2. Sauté Onions and Garlic: In the same pot, add diced onions and minced garlic. Cook for 3-5 minutes until softened and fragrant to build a savory aromatic base.
  3. Add Potatoes and Broth: Add peeled, diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until potatoes are fork-tender.
  4. Return Sausage and Add Kale: Return the cooked sausage to the pot. Stir in chopped kale and cook for about 5 minutes until the greens are tender but still vibrant.
  5. Finish with Cream and Seasoning: Stir in heavy cream and season with salt, pepper, and optional red pepper flakes. Simmer gently for another 5 minutes to allow flavors to blend.

Notes

  • Use fresh Italian sausage for authentic flavor.
  • Add kale late in the cooking process to keep it bright and avoid a mushy texture.
  • Adjust heavy cream amount to your preference for creaminess.
  • Dice potatoes evenly for consistent cooking and texture.
  • Sauté aromatics in the sausage drippings for deeper flavor.
