Description

Alice Springs Chicken is a savory, cheesy, restaurant-style dish you can make right at home. Juicy seared chicken breasts are topped with crispy bacon, sautéed mushrooms, melty Colby Jack cheese, and a tangy honey mustard sauce.   • 4 boneless skinless chicken breasts

  • 6 slices bacon

  • 1 cup mushrooms, sliced

  • 1 ½ cups shredded Colby Jack or cheddar cheese

  • 1 tbsp olive oil or butter

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • ½ tsp paprika (optional)

Honey Mustard Sauce:

  • ¼ cup Dijon mustard

  • ¼ cup honey

  • 2 tbsp mayonnaise

  • 1 tsp lemon juice (optional)


Instructions

  1. Make the Honey Mustard Sauce:
    In a bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice (if using). Reserve half for serving, and use the other half for marinating.

  2. Marinate the Chicken:
    Place chicken breasts in a bowl or zip-top bag with half of the honey mustard sauce. Marinate for 30 minutes (or up to 4 hours) in the refrigerator.

  3. Cook the Bacon:
    In a large skillet, cook bacon until crispy. Remove and set aside. Drain most of the grease, leaving a little for sautéing.

  4. Sauté the Mushrooms:
    In the same pan, add butter or oil if needed. Sauté mushrooms and garlic until tender and golden, about 5 minutes. Set aside.

  5. Cook the Chicken:
    Remove chicken from marinade and discard marinade. Season chicken with salt, pepper, and paprika (if using). Sear chicken in the skillet over medium-high heat for 4–5 minutes per side, or until golden and cooked through.

  6. Assemble and Bake:
    Preheat oven to 375°F (190°C). Transfer chicken to a baking dish. Top each breast with mushrooms, crumbled bacon, and shredded cheese.

  7. Bake:
    Bake uncovered for 10–15 minutes, until cheese is melted and bubbly.

  8. Serve:
    Drizzle with remaining honey mustard sauce and garnish with parsley if desired.

Notes

Pound chicken to even thickness for quicker cooking.

Use freshly shredded cheese for best melt and flavor.

Skip mushrooms or replace with sautéed onions or bell peppers if preferred.

Grill chicken instead of searing for a smoky twist.
