- 4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 8 ounces cream cheese (softened)
- ½ cup sour cream
- 2 garlic cloves (minced)
- 1 ½ cups shredded mozzarella cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon onion powder
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Season the chicken breasts with salt, pepper, paprika, and onion powder.
- Heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
- In a separate bowl, mix the softened cream cheese, sour cream, minced garlic, and a pinch of salt until smooth and well combined.
- Layer the fresh spinach in the bottom of the prepared baking dish.
- Place the seared chicken breasts on top of the spinach.
- Spread the cream cheese mixture evenly over the chicken breasts.
- Sprinkle shredded mozzarella cheese over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Let the casserole cool for about 5 minutes before serving.
