Ingredients
Scale
For the Soup:
- 2 tbsp olive oil (or avocado oil or butter)
- ½ sweet onion (chopped; yellow or red onion works well)
- 3 garlic cloves (minced)
- ½ lb ground beef (swap with ground turkey or chicken)
- ½ lb spicy Italian sausage (mild sausage or plant-based sausage can substitute)
- 3 tbsp tomato paste
- 1 tbsp dried Italian herbs (fresh oregano and parsley are great substitutes)
- 24 oz marinara sauce or tomato sauce (use your favorite brand or homemade)
- ¼ cup heavy cream (half-and-half or coconut cream can be used for lighter options)
- 4 cups chicken or vegetable broth (beef broth adds a richer flavor)
- 3 cups pasta (broken lasagna noodles or any pasta of your choice)
- 2 cups fresh spinach (chopped; kale or arugula can be used)
- ¾ cup whole milk ricotta (cottage cheese works as a lighter alternative)
- ½ cup freshly grated Parmesan cheese (Pecorino Romano can also be used)
- Fresh basil (for garnish)
Instructions
- Cook the Meat:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.
- Add the garlic and cook for another minute until fragrant.
- Add the ground beef and Italian sausage. Break up the meat with a spoon and cook until browned and fully cooked.
- Add Tomato Paste and Herbs:
- Stir in the tomato paste and dried Italian herbs. Cook for 1-2 minutes to allow the flavors to meld together.
- Add Sauce and Broth:
- Pour in the marinara sauce (or tomato sauce) and chicken (or vegetable) broth. Bring the mixture to a simmer, stirring occasionally.
- Cook the Pasta:
- Add the pasta to the soup and cook according to the package instructions (usually around 8-10 minutes) or until the pasta is tender.
- Add Cream and Spinach:
- Once the pasta is cooked, stir in the heavy cream and fresh spinach. Allow the spinach to wilt into the soup.
- Stir in the Cheeses:
- Add the ricotta and Parmesan cheese to the soup. Stir well to combine, creating a creamy and cheesy base.
- Serve:
- Ladle the soup into bowls and garnish with fresh basil. Serve hot and enjoy!
Notes
- If you prefer a thicker soup, you can reduce the amount of broth or add more ricotta to make it extra creamy.
- For a vegan version, use plant-based sausage, non-dairy cream, and a dairy-free cheese alternative.
- This soup can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
