Description

French Chocolate Flan is a decadent yet elegantly simple dessert that combines the creamy smoothness of classic flan with the rich, intense flavor of high-quality dark chocolate. Perfectly balanced and featuring a silky custard texture, it’s an approachable recipe that transforms basic ingredients into a luxurious French treat ideal for any occasion.

Ingredients

Scale

Custard Base

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 7 oz high-quality dark chocolate (at least 60% cocoa), chopped
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the custard base: Gently warm the whole milk and heavy cream in a saucepan over low heat until hot but not boiling. Meanwhile, break the eggs into a mixing bowl, add the sugar, and whisk until well combined and slightly frothy. Slowly pour the warm milk mixture into the eggs while whisking constantly to temper the eggs and avoid scrambling.
  2. Melt the chocolate: In a separate bowl, melt the dark chocolate gently using a double boiler or microwaving in short bursts. Stir the melted chocolate into the tempered egg and milk mixture along with the vanilla extract and a pinch of salt, creating a smooth, rich chocolate custard base.
  3. Strain and pour: For the smoothest texture, strain the custard mixture through a fine mesh sieve into your baking dish or individual ramekins to remove any lumps or cooked egg bits.
  4. Bake in a water bath: Place the filled baking dish or ramekins in a larger pan. Pour boiling water into this outer pan until it reaches halfway up the sides of the flan container. Bake at 325°F (160°C) for 40-50 minutes, until the custard is set but still slightly wobbly in the center.
  5. Chill and serve: Let the flan cool to room temperature, then refrigerate for at least 4 hours or overnight to firm up and deepen flavors. When ready, run a knife around the edges and gently invert onto a serving plate before garnishing as desired.

Notes

  • Use high-quality dark chocolate with at least 60% cocoa for the best flavor.
  • Don’t overbake; the flan should jiggle slightly in the center when done.
  • A water bath (bain-marie) is essential for gentle, even cooking to prevent cracking.
  • Strain the custard before baking to ensure a silky smooth texture.
  • Serve chilled to allow flavors to meld and to achieve the perfect creamy consistency.
