Instructions

  1. Prepare and Cook Potatoes: Wash and cut the potatoes into bite-sized pieces. Boil them in salted water until tender but still firm, about 10-15 minutes. Drain and keep warm.
  2. Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and drain on paper towels, reserving the bacon fat in the pan.
  3. Sauté Onions in Bacon Fat: Add chopped onions to the skillet with the bacon fat. Cook until translucent and soft, about 4-5 minutes, to deepen the overall flavor.
  4. Make the Dressing: Add apple cider vinegar, chicken broth, Dijon mustard, salt, and pepper to the cooked onions. Stir and simmer for a few minutes until flavors meld and dressing slightly thickens.
  5. Combine and Toss: Place warm potatoes in a large bowl and pour the hot dressing over them. Toss gently to coat evenly. Crumble the cooked bacon and add along with chopped parsley. Mix well.
  6. Serve Warm or Room Temperature: Serve the salad warm or at room temperature to let the flavors fully develop and the potatoes absorb the dressing.
