Ingredients

Scale

Main Ingredients

  • 1 lb Ground Beef (80/20 blend)
  • 68 Small Flour or Corn Tortillas
  • 68 slices Sharp Cheddar or American Cheese
  • 1 medium Onion, thinly sliced
  • 1/2 cup Pickles, sliced
  • 1 cup Lettuce or Shredded Cabbage
  • 2 tbsp Mayonnaise
  • 2 tbsp Ketchup
  • Salt and Pepper, to taste
  • 2 tbsp Cooking Oil or Butter

Optional Variations & Toppings

  • Sliced Jalapeños or Hot Sauce (for spicy kick)
  • Black Bean Patties or Seasoned Mushrooms (vegetarian option)
  • Pepper Jack or Gouda Cheese (cheese swap)
  • Avocado slices or Guacamole
  • Fresh Cilantro, thinly sliced Radishes, or Green Onions (garnish)
  • Lime wedges (for squeezing on top)

Instructions

  1. Prepare Your Workspace and Ingredients: Start by setting out the ground beef, thinly slicing the onions, and gathering tortillas, cheese, and condiments. Preheat a heavy skillet or griddle over medium-high heat until it sizzles when touched.
  2. Shape and Smash the Patties: Divide the ground beef into small 3-ounce balls. Place one ball on the hot skillet and use a sturdy spatula or press to smash it thin. Let it cook undisturbed for 2-3 minutes to develop crispy edges before flipping.
  3. Add Cheese and Finish Cooking: After flipping the patties, immediately add a slice of cheese on top. Cook for another 1-2 minutes until the cheese melts and the patty is cooked through.
  4. Warm Tortillas and Assemble: Warm tortillas on a dry skillet or in the microwave briefly. Layer each tortilla with a smash burger patty, then top with sliced onions, pickles, lettuce or cabbage, and your favorite sauces like mayonnaise and ketchup. Fold the tortilla to form tacos.
  5. Serve with Garnishes and Sides: Add optional garnishes like cilantro, radishes, or lime juice for extra flavor. Serve alongside fries, coleslaw, or a simple salad for a complete meal.

Notes

  • Use a cast iron or heavy skillet to achieve a crispy crust on the burgers.
  • Handle ground beef lightly to keep patties tender and juicy.
  • Smash quickly and firmly for crispy edges and juicy centers.
  • Warm tortillas right before serving to keep them soft and pliable.
  • Customize sauces by mixing mayonnaise with ketchup, mustard, or sriracha.
