Description

Lemon Artichoke Arugula Pizza is a fresh, vibrant, and zesty pizza combining tangy lemon, tender marinated artichoke hearts, peppery arugula, and creamy mozzarella. This light yet satisfying pizza is perfect for a healthy homemade meal or special occasion, offering a unique blend of citrusy and savory flavors that delight the palate.

Ingredients

Scale

For the Dough and Base

  • 1 ball pizza dough (homemade or store-bought)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Toppings

  • 1 cup shredded mozzarella cheese
  • 1 cup marinated artichoke hearts, drained and chopped if large
  • 2 cups fresh arugula
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the dough and olive oil base: Preheat the oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired shape and thickness. Transfer the dough to a baking sheet or pizza stone. Mix olive oil with minced garlic and brush this mixture generously over the dough surface to create a flavorful base.
  2. Add the cheese and artichokes: Evenly sprinkle shredded mozzarella over the dough, making sure to cover it well without overloading. Scatter the marinated artichoke hearts evenly on top for balanced savory bites in every slice.
  3. Bake the pizza: Place the pizza in the preheated oven. Bake for 10 to 12 minutes or until the crust turns golden and the cheese bubbles with slight browning. Monitor carefully to avoid burning.
  4. Add fresh lemon and arugula: Remove the pizza from the oven. Immediately top with fresh arugula and lemon zest. Squeeze the fresh lemon juice over the top. Finish by grating Parmesan cheese on and seasoning with sea salt and freshly ground black pepper to taste.
  5. Slice and serve: Cut the pizza into slices and serve immediately to enjoy the contrast of warm melted cheese with crisp, fresh arugula and bright citrus notes.

Notes

  • Use fresh lemon zest and juice for maximum brightness and aroma.
  • Don’t overload toppings to keep the crust crispy and avoid sogginess.
  • Add arugula only after baking to preserve its fresh texture and peppery flavor.
  • A pizza stone can help create a professional, crispy crust.
  • Marinated artichokes are preferred for more flavor; canned ones can be seasoned before use.
  • For a dairy-free option, replace mozzarella with dairy-free cheese or omit cheese and drizzle extra olive oil.
