- 2 tbsp olive oil
- 2 large onions, sliced
- 2 cloves garlic, minced
- 1 lb mushrooms, sliced
- 4 cups vegetable broth
- Salt and pepper, to taste
- 4 slices of bread
- 1 cup shredded cheese (such as Gruyere or cheddar)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and cook, stirring occasionally, until they become caramelized, about 20 minutes.
- Add the minced garlic and sliced mushrooms, and cook until the mushrooms are browned and tender.
- Pour in the vegetable broth and bring the mixture to a simmer. Season with salt and pepper to taste. Simmer for another 10 minutes to allow the flavors to meld.
- While the soup is simmering, prepare the cheesy toasties. Place the bread slices on a baking sheet and top each slice with shredded cheese.
- Broil the bread in the oven until the cheese is melted, bubbly, and slightly golden.
- Serve the hot soup with cheesy toasties on the side for dipping.
