This creamy, comforting Chicken Gnocchi Soup is inspired by the popular Olive Garden recipe. Loaded with tender chicken, soft gnocchi, and fresh spinach, it’s the perfect bowl of warmth and flavor for any time of year!

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 cups fresh or frozen gnocchi
- 2 cups fresh spinach
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides.
- Add the diced onion and minced garlic to the pot and cook until softened, about 2-3 minutes.
- Stir in the chicken broth, dried thyme, oregano, salt, and pepper. Bring to a simmer and let cook for 10 minutes to combine the flavors.
- Add the heavy cream and gnocchi to the pot. Cook for 4-5 minutes, or until the gnocchi are tender and float to the top.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Taste and adjust seasonings if needed before serving.
Notes
- For a thicker soup, you can simmer it for a little longer to reduce the broth.
- If using frozen gnocchi, no need to thaw before adding to the soup.
- You can substitute the spinach with kale if you prefer a heartier green.
