- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup dried strawberries, finely chopped
- 1/4 cup pistachios, finely chopped
- 1 teaspoon vanilla extract
- Extra chopped pistachios and dried strawberry powder (for rolling)
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Remove from heat and pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let sit for 1-2 minutes to allow the chocolate to melt.
- Stir the mixture gently until smooth and fully combined.
- Add the finely chopped dried strawberries, pistachios, and vanilla extract to the chocolate mixture. Stir until evenly incorporated.
- Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours, or until firm.
- Once firm, use a melon baller or spoon to scoop the mixture and roll it into small balls.
- Roll the truffles in the extra chopped pistachios and dried strawberry powder until well-coated.
- Store in an airtight container in the refrigerator until ready to serve
Notes
- You can substitute the dark chocolate with milk chocolate if you prefer a sweeter flavor.
- To make dried strawberry powder, simply blend dried strawberries in a food processor or spice grinder.
- For a more intense strawberry flavor, increase the amount of dried strawberries in the truffle mixture.
