  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup dried strawberries, finely chopped
  • 1/4 cup pistachios, finely chopped
  • 1 teaspoon vanilla extract
  • Extra chopped pistachios and dried strawberry powder (for rolling)

Instructions

  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  • Remove from heat and pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let sit for 1-2 minutes to allow the chocolate to melt.
  • Stir the mixture gently until smooth and fully combined.
  • Add the finely chopped dried strawberries, pistachios, and vanilla extract to the chocolate mixture. Stir until evenly incorporated.
  • Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours, or until firm.
  • Once firm, use a melon baller or spoon to scoop the mixture and roll it into small balls.
  • Roll the truffles in the extra chopped pistachios and dried strawberry powder until well-coated.
  • Store in an airtight container in the refrigerator until ready to serve

Notes

  • You can substitute the dark chocolate with milk chocolate if you prefer a sweeter flavor.
  • To make dried strawberry powder, simply blend dried strawberries in a food processor or spice grinder.
  • For a more intense strawberry flavor, increase the amount of dried strawberries in the truffle mixture.
