1 medium green or red bell pepper, chopped

¾ cup chopped cooked ham

Small bunch scallions, chopped (white and green parts separated)

1 ⅓ cups light cream or half-and-half

½ teaspoon onion powder

1 heaping cup shredded Cheddar or Cheddar Jack cheese
Instructions

Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with nonstick cooking spray and set aside.

Sauté the vegetables: In a medium skillet, heat the olive oil over medium heat. Add the chopped bell pepper and cook for 3–4 minutes until softened. Season with a pinch of kosher salt.

Add the ham and scallions: Add the chopped cooked ham and the white parts of the scallions to the skillet. Cook for another 2–3 minutes, stirring occasionally. Remove from heat and set aside.

Prepare the egg mixture: In a large bowl, whisk together the eggs, light cream or half-and-half, onion powder, black pepper, and the green parts of the scallions.

Assemble the quiche: Unroll the dough and fit it into the prepared pie dish. Prick the bottom with a fork to prevent it from puffing up during baking. Spread the sautéed bell pepper, ham, and scallion mixture evenly over the bottom of the crust. Pour the egg mixture over the top, ensuring everything is evenly coated.

Top with cheese: Sprinkle the shredded Cheddar or Cheddar Jack cheese over the quiche filling.

Bake: Bake the quiche for 35–40 minutes or until the filling is set, the top is golden, and a knife inserted into the center comes out clean.

Notes
You can use store-bought pie crust for a quicker version or make your own for a homemade touch.
