Ingredients

Scale

Meatballs

  • 1 lb ground meat (chicken, turkey, or beef)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup breadcrumbs or oats
  • Salt, to taste
  • Pepper, to taste
  • Optional: chili flakes or turmeric, to taste

Curry Sauce

  • 1 tablespoon oil (vegetable or coconut oil)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 can (13.5 oz) coconut milk
  • Salt, to taste
  • Optional: splash of water or stock to adjust sauce thickness

Garnishes and Herbs

  • Fresh cilantro or basil, chopped
  • Optional: sliced green onions
  • Optional: toasted coconut flakes

Instructions

  1. Prepare the Meatballs: In a large bowl, combine the ground meat with finely chopped onion, minced garlic and ginger, breadcrumbs, salt, pepper, and any optional spices. Mix gently until just combined to keep the meatballs tender.
  2. Shape and Cook the Meatballs: Roll the mixture into bite-sized meatballs and place on a baking sheet or plate. Heat oil in a skillet over medium heat and brown the meatballs evenly on all sides. They do not need to be fully cooked at this point.
  3. Make the Coconut Curry Sauce: In the same skillet, sauté additional onion, garlic, and ginger until fragrant. Stir in the curry powder and cook briefly to release its aroma. Pour in the coconut milk and simmer gently to thicken the sauce slightly.
  4. Simmer Meatballs in Sauce: Return the browned meatballs to the skillet and spoon the curry sauce over them. Cover and let simmer for 10-15 minutes until meatballs are fully cooked and tender.
  5. Finish with Fresh Herbs: Just before serving, sprinkle chopped cilantro or basil over the dish to add a fresh, herbal note that brightens the creamy sauce.

Notes

  • Use fresh curry powder or paste for the best flavor.
  • Mix meat gently to keep meatballs tender and juicy.
  • Brown meatballs well to develop texture and flavor.
  • Simmer low and slow so meatballs absorb maximum flavor.
  • If sauce thickens too much, add water or stock to loosen.
  • This dish is naturally dairy-free and can be made gluten-free by using gluten-free breadcrumbs or oats.
  • Freezes well for up to 2 months; thaw and reheat gently.
